[Bug]: RvConsoleWindow Missing All Output

### What happened?

We're seeing logs if OpenRV is opened from a terminal window, but the internal console window never prints anything regardless of where it's opened. Perhaps we're missing a relevant build flag or something? We're pinned on v2.0.0 at the moment but I've also tried the latest commits with the same result.
